Bolay, at 250 S. State Road 7 in Buckingham Plaza, will have customers build bowls of food choosing from a list of ingredients that include gluten-free cilantro noodles, Peruvian quinoa, vegetables, tofu and lemon chicken. Cold-pressed juices, teas, local craft beer and wine also will be available.

The restaurant is expected to open in February, but an exact date was not available.

Gannon partnered with his son, Chris, to launch the restaurant focused on clean and healthy eating.
